Why does food on a buffet warmer get dry or change colors?
I hosted a cocktail once and used a food buffet server. Its one of those things that keeps food heat up either with electricity or one of those sterno gel gas cans. How come it turns my meat sulky sometimes? is there any way to prevent that?
it's pulling the moisture out of the food, all you can do is keep adding more not wash lavishly or broth to the pan, and try to keep it covered.
