Should water be placed in an electric steam table's well, or in a deep pan set into the well?
I recently purchased an old, hardened electric steam table. Of course, no instruction manual came with it and I am in whether water should be placed directly into the wells, or if there should be a pan of water placed in them, and then the other pans
